I first tasted a raw mango flan when I was at The Spa Resort in Chiang Mai, Thailand.  It was to die for.  I came home bound and determined to figure out how to make it. I think this comes pretty darn close… dare I say, maybe even a little better :)  This has become my new favorite :)  This is a great crossover raw food dish that everyone, raw and non-raw, will enjoy.  Give it a try and leave a comment below letting me know what you think.

Ingredients
  1. 1 cup coconut meat
  2. 1 cup mango (fresh or frozen)
  3. ½ cup coconut water
  4. 2 tablespoons raw agave
  5. ½ cup cashews, soaked 15 min. (optional)
  6. 11/2 teaspoons vanilla extract
  7. 1 teaspoon salt
  8. 1 tablespoon coconut oil
  9. ¼ teaspoon cinnamon
  10. ¼ teaspoon nutmeg
  11. 1/8 teaspoon cardamom
Instructions
  1. Blend all ingredients in a high-speed blender until silky smooth. Eat right away or chill for a firmer pudding.
Notes
  1. For a lower glycemic option, try using a low glycemic fruit like blueberries or raspberries, and use 5-15 drops to taste of NuNaturals Stevia instead of agave. For a more properly combined dish, omit the cashews.
