Ingredients
  1. 1 English Cucumbers (One per person)
  2. 1 Tomato (One per person)
  3. 4 Large Basil Leaves
  4. 1 T. Capers
  5. 1 T. Olive Oil
  6. 1 T. Pine Nuts
  7. Salt and Pepper to taste
Instructions
  1. Use a julienne peeler to create cucumber noodles.
  2. Combine all remaining ingredients, except pine nuts, in a bowl and toss together.
  3. Pour mixture on top of cucumber noodles.
  4. Top with pine nuts.
  5. ENJOY!
