Ingredients
- 1 English Cucumbers (One per person)
- 1 Tomato (One per person)
- 4 Large Basil Leaves
- 1 T. Capers
- 1 T. Olive Oil
- 1 T. Pine Nuts
- Salt and Pepper to taste
Instructions
- Use a julienne peeler to create cucumber noodles.
- Combine all remaining ingredients, except pine nuts, in a bowl and toss together.
- Pour mixture on top of cucumber noodles.
- Top with pine nuts.
- ENJOY!
