18th June 2010Raw FoodNo CommentsOn Saturday June 12th, I had was honored to be part of the Women of the Green Generation‘s first annual conference in LA. I was so impressed by the caliber of women there who are shifting the well-being of people and the planet with their passion, products and practices. I left feeling inspired and proud to be a woman of the green generation :)
In addition to presenting a talk about Turning Business Failure Into Personal Success, and participating on the Health and Wellness panel, I did a raw food demo in the middle of the day and offered up raw food goodies to the ladies who were there. Below are the recipes for these rawlicious treats. Enjoy!
Grapefruit, Pear, Spinach Smoothie
A delicious way to get your greens.
1 pink grapefruit, peeled and placed in the blender whole
1/2 English cucumber (unpeeled)
1-2 pears
1 healthy handful of spinach
Put everything in the blender. Blend and enjoy.
Watermelon Wow
This is a really fun and pretty summer drink.
2 cups watermelon
1 Tablespoon agave
1 lemon, juiced
6 Mint leaves, sliced
Ice
Place everything in blender except the ice, blend, and then add enough ice to get to the consistency you want. For a touch of elegance, serve in a martini glass and garnish with mint.
Watermelon Tomato Gazpacho
This soup is even better the next day…. if it lasts that long.
3 cups watermelon seeded and pureed in a blender
1 cup watermelon, diced small
1 cup tomato, diced small (about 2 small)
1 cup peeled cucumber, diced small
1/2 cup red, yellow, or orange pepper, diced small
2 tablespoons lime juice
I handful cilantro
1/2 small jalapeno, seeded and minced
1 green onion
1 teaspoon salt
Freshly ground pepper
In large glass bowl, place watermelon puree and then add all remaining ingredients. Season with pepper and additional salt to taste and garnish with cilantro.
Cinnamon Balls with Vanilla Cream Sauce
Serve Cinnamon Balls alone or with Vanilla Cream Sauce on the top or on the side.
Cinnamon Balls
2 cups almond meal
2 tablespoons cinnamon
1/4 teaspoons nutmeg
1 cup raisins, soaked for a few minutes
1/4 cup orange juice (best if fresh squeezed)
2 teaspoons vanilla extract
Combine almond meal, cinnamon and nutmeg in a bowl and mix well. Add orange juice, raisins and vanilla to blender and blend enough to break the raisins apart, but not pulverize them completely. Add liquid mixture to dry ingredients and mix together with a spatula until the mixture begins to form into a ball. Using a teaspoon, take small amounts of dough and roll in your hands to make little balls. Set on plate. These can be served at room temperature or chilled to make firmer. Makes about 15 balls.
Vanilla Cream Sauce
1 cup raw cashews, best if soaked 1 hour or more
1 cup coconut meat
1/2 cup water
1/2 cup agave
2 tablespoons vanilla extract
1/4 teaspoons Celtic sea salt
1/2 cup coconut butter/oil, warmed to liquefy
In a high-speed blender, blend all ingredients except the coconut oil, until completely smooth. With the blender on low, gradually add the coconut oil and continue to blend until completely incorporated and smooth. This can be served at room temperature and drizzled over the balls, or chilled and used more like a frosting.
