Coconut Mango Vanilla Pudding

Coconut Mango Vanilla Pudding
Ingredients
1 cup coconut meat (1-2 coconuts)
1 cup mango (fresh or frozen)
½ cup coconut water
2 tablespoons raw agave
½ cup cashews, soaked 15 min.
11/2 teaspoons vanilla extract
1 teaspoon salt
1 tablespoon coconut oil
¼ teaspoon cinnamon
¼ teaspoon nutmeg
1/8 teaspoon cardamom
Directions
Blend all ingredients in a high-speed blender until silky smooth. Eat right away or chill for a firmer pudding.

Found your “coconut knife” and made this for Bill for dessert tonight. We both loved it and ate the whole batch. (Well, I did halve the recipe so.. . ) His comment was “Yum! Tastes like Christmas!”

Gosh Pam that does indeed look SOOOOOO Good! I know I’ll love it as I adore mango & love coconut, vanilla, smooth pudding, and I like cardomom etc too… I have or can get most of the list I think so if I can find a coconut here, especially one with water, and a good mango – mangos are a treat anyway never seen it frozen (not so easy getting some ingredients here in the UK) then I will make some & let you know, as you have really inspired me.. Many Thanks :)
