This is my new favorite :)  This is a great crossover dish that everyone, raw and non-raw, will enjoy.  Give it a try and let me know what you think.

Coconut Mango Vanilla Pudding

Ingredients

1 cup coconut meat (1-2 coconuts)

1 cup mango (fresh or frozen)

½ cup coconut water

2 tablespoons raw agave

½ cup cashews, soaked 15 min. (optional)

11/2 teaspoons vanilla extract

1 teaspoon salt

1 tablespoon coconut oil

¼ teaspoon cinnamon

¼ teaspoon nutmeg

1/8 teaspoon cardamom

Directions

Blend all ingredients in a high-speed blender until silky smooth.  Eat right away or chill for a firmer pudding.

Lower Glycemic Option

For a lower glycemic option, try using a low glycemic fruit like blueberries, and use 5-15 drops to taste of NuNaturals Stevia instead of agave. For a more properly combined dish, omit the cashews.
